Indonesian National Standard for Coffee Beans

From Triage System to Disability Rating System

Indonesia has implemented a coffee bean export standard based on a defect rating system since 1990, replacing the triage (weight-by-weight) system. The current coffee bean quality standard is Indonesian National Standard No. 01-2907-2008 Coffee Beans , the result of several revisions.

In addition to considering global market developments and international requirements, this standard also takes into account some of the ICO (International Coffee Organization) Resolution No. 407 concerning the “Coffee Quality Improvement Program”.

General Quality Requirements

Four Criteria that Apply to All Coffee Beans

Coffee bean moisture content no longer differs based on processing type—both wet and dry processing are limited to a maximum of 12,5%. Other requirements remain the same as the previous standard.

Live insects There is no
The seeds smell rotten or moldy There is no
Water content (w/w) Max 12,5%
Impurity content (w/w) Max 0,5%

Special Quality Requirements · Based on Seed Size

Coffee Specifications According to Sieving and Processing Type

The bean size criteria are the same, using round holes for all types of coffee beans and depending on the processing process. However, for Robusta to pass the sieve, the requirements differ depending on the processing method—wet and dry.

Based on the Disability Value System

Seven Levels of Coffee Bean Quality

The lower the number of defects, the higher the quality of the coffee. The rating is calculated from a 300-gram test sample.

Quality 2

Total defect value
Quality 3

Note: For Arabica coffee, grade 4 is not divided into sub-grades 4a and 4b.

Export Practices

Which Quality is Most Exported?

In general, Indonesian Arabica coffee is exported in grade 1. The composition of Robusta coffee is more diverse.

Kopi Robusta

Export quality composition

Quality 4± 60%
Grade 5 and Grade 6± 30%
Grade 1 and Grade 2± 10%

Arabica Coffee

Quality 1Dominant

In general, Indonesian Arabica coffee is exported in grade 1 — the highest quality level with a maximum defect score of 11.

Determination of Defect Value

Twenty Types of Defects and Their Weighting

Determining the value of coffee bean defects is based on the following list.

No.Type of defectDefective value
011 (one) black seed1 (one)
021 (one) partially black seed½ (half)
031 (one) cracked black seed½ (half)
041 (one) coffee bean1 (one)
051 (one) chocolate bean¼ (a quarter)
061 (one) large coffee skin1 (one)
071 (one) medium sized coffee skin½ (half)
081 (one) small coffee skin1/5 (one fifth)
091 (one) horny seed½ (half)
101 (one) large horn skin½ (half)
111 (one) medium-sized horn skin1/5 (one fifth)
121 (one) small horn skin1/10 (one tenth)
131 (one) broken seed1/5 (one fifth)
141 (one) young seed1/5 (one fifth)
151 (one) seed with one hole1/10 (one tenth)
161 (one) seed with more than one hole1/5 (one fifth)
171 (one) spotted seed1/10 (one tenth)
181 (one) twig, soil or large stone5 (five)
191 (one) twig, earth or medium sized stone2 (two)
201 (one) twig, soil or small stone1 (one)

Slide the table sideways to see all the columns.

Note: The number of defect values is calculated from a test sample weighing 300 grIf a coffee bean has more than one defect value, then the determination of the defect value is based on the weight of the largest defect value.
